The Absinthe
Long before it was misunderstood, absinthe was simply a serious spirit. We went back to a recipe from 1855 to make ours properly.
Green Monkey Absinthe is distilled exclusively from the highest-quality wormwood, following a recipe dated to 1855, decades before the moral panic and bans that gave absinthe its unfair reputation. We made no attempt to modernise it. The result is old-fashioned and genuinely intense: 68% Vol, distilled on our historic copper still and finished with pure limestone spring water from our own well.
It rewards a proper serve. Our house cocktail, the Necromancer, was built specifically around it: 21ml Green Monkey Absinthe, 21ml elderflower liqueur, 21ml Lillet Blanc, a dash of our London Dry Gin and 21ml fresh lemon juice, shaken hard with ice and strained into a coupe with a lemon twist. It's the drink we hand people who think they don't like absinthe.
